It’s Friday and, unless you dine out all weekend, you may be trying to sort out your weekend meal planning.
Since summer time and light meals go hand in hand, think about mini quiche.
They’re great for brunch, or as appetizers when friends are over. While they’re lovely fresh from the oven, those of us enjoying hot weather may want to prep these a day ahead of time and serve them alongside a nice salad.
