For those of us in North America, the recent Labour Day weekend marks the unofficial end of summer – or, at least, summer holidays. School children everywhere are heading back to class with various degrees of excitement, and parents are re-establishing routines.
One routine that’s easy to drop is that of preparing lunches to take to work. We’ve all done it, and of course it’s nice to pop out to a restaurant with friends.
My lunch today will include this tasty black bean and corn salad, with the kick coming from an easily prepared lime-based dressing.
