For those of us in North America, the recent Labour Day weekend marks the unofficial end of summer – or, at least, summer holidays. School children everywhere are heading back to class with various degrees of excitement, and parents are re-establishing routines.
One routine that’s easy to drop is that of preparing lunches to take to work. We’ve all done it, and of course it’s nice to pop out to a restaurant with friends.
My lunch today will include this tasty black bean and corn salad, with the kick coming from an easily prepared lime-based dressing. What do you do about work day lunches? Do you pop down to your in-house cafeteria, out to a grocery store, or do you skip it? If you bring lunch from home, what does it look like?
I love cooking, therefore I am often preparing home made salads. I like a for example the combination of lettuce, tomatoes, carrots and nuts. I add either egg, salmon or meat to ensure my protein dose.
Sounds like a good lunch for the office, Julia – and I think nuts are increasingly popular.
… and roasted, unsalted pumpkin or sunflower seeds or dried cranberries are also a nice little addition to salads.
